Our founder, Chef Lila Colello, started Flakely because she refused to accept that gluten-free meant settling. Unwilling to live without croissants, she set out to recreate French pastries that taste exactly like their wheat-flour counterparts. Flakely is one of only a handful of gluten-free bakeries in the world to master the technically difficult gluten-free croissant.
